HONIG SAUVIGNON BLANC NAPA 2016

Description and Flavor Profile: The fruit for this wine comes from our sustainably farmed vineyard in Rutherford, as well as other nearby vineyards. Bright acidity lends a crisp freshness to the flavors of peach, passionfruit, and lemongrass, artfully balanced by a touch of freshly squeezed grapefruit and lime. Juicy and refreshing, with aromas of jasmine, peach, and grapefruit rind. Medium-bodied, with a lingering finish.

The Process: The Sauvignon blanc grapes are treated using two different methods. To enhance the delicate tropical fruit flavors, a portion of the fruit goes directly into the press as whole clusters. The remaining fruit is de-stemmed and left in contact with the skins for several hours before pressing, amplifying the grapefruit/citrus components. All of the juice is fermented at cool temperatures in stainless steel tanks using a variety of yeast strains selected to bring out the aroma and flavor profiles of Sauvignon Blanc.

Aged on light lees 8% in neutral oak tanks (the oak tanks help develop mid-palate texture without adding any oak flavor) 92% in stainless steel tanks

Pairing: Try creamy or firm cheeses garnished with fresh seasonal fruit, or grilled filet of sole with citrus and herbs. Also great with shrimp shish kabobs served over rice, crab cakes, or Thai cuisine and other light spicy foods.

Varietal: 95% Sauvignon Blanc, 4% Semillon, 1% Muscat

Honig Sauvignon Blanc   Rutherford 2015

HONIG SAUVIGNON BLANC RUTHERFORD 2015

Description and Flavor Profile: The fruit is from select blocks of our sustainably farmed vineyard in Rutherford, Napa Valley. Aromas and flavors of peach, white peach blossom, Ruby grapefruit, and vanilla. Round and rich on the palate, highlighted by toasty oak. The finish is long and crisp, and reminiscent of Key lime pie.

The Process: A portion of the blend was selected from lots that were fermented at cool temperatures in stainless steel tanks and subsequently aged on the lees in neutral oak casks for 8 months. The remainder of the juice was fermented in new, specially selected, French oak barrels and puncheons. The barrel fermented portion of the blend underwent malolactic fermentation and was aged on the lees for 8 months. Individual lots were selected for the blend in November 2015 and the final blend was assembled just prior to bottling in July 2016. 60% of the wine was then aged for 6 months in neutral oak tanks and 40% aged for 6 months in new French oak barrels.

Pairing: This rich, complex and refreshing Sauvignon Blanc will prove delightful with a wide variety of menus, ranging from simple pastas to the complex curries of south Asia.

Varietal: 88% Honig Estate Sauvignon Blanc, 2.0% Honig Estate Muscat and 10% Honig Estate Semillon.

Barrel Aging: 60% aged for 6 months in neutral oak tanks and 40% aged for 6 months in new French oak barrels.

Honig Sauvignon Blanc   Late Harvest 2013

HONIG SAUVIGNON BLANC LATE HARVEST 2013

Description and Flavor Profile: The fruit for this wine comes from Block One of our sustainably farmed vineyard, next to the Napa River. The close proximity to the river’s moisture aids in the natural occurrence of Botrytis, critical to a late harvest wine.

This wine is dessert in a bottle, with the aromas of dried apricot, peach cobbler, figs and honey, spiced with nutmeg and vanilla. Rich, bright and exquisitely balanced.

The Process: Barrel fermented in 100% new French oak barrels. Aged for 8 months.

Pairing: Great on its own, or pair with cheesecakes, apple pie, or Roquefort cheese.

Varietal: 100% Sauvignon Blanc, Honig Estate.

Honig Cabernet Sauvignon 2014

HONIG CABERNET SAUVIGNON 2014

Description and Flavor Profile: A Cabernet with characters of bright blackberry, red plum, and raspberry fruit with notes of cranberry, black tea, spice and coriander seed. Luscious and balanced, with toasty oak and a long finish.

The Process: The fruit for this wine comes from both our sustainably farmed vineyard in Rutherford, and from local Napa Valley vineyards. Each vineyard block was harvested and made into an individual lot representing that block. The wines were pressed off the skins from 10 to 28 days after crushing. Blending generally takes place between January and April of the year following harvest, and the wine is then aged for 18 months in American oak barrels (35% new barrels).

Pairing: Serve at room temperature (65ºF) with a well-marbled steak like a ribeye. This is also an excellent choice of wine with a filet mignon, braised beef short ribs, and roasted prime rib. Try with cheeses such as Swiss Gruyere, Comté, Taleggio and Beemster Classic. It also is an excellent choice to accompany chocolate desserts.

Honig Cabernet Sauvignon (Bartolucci) 2013

HONIG CABERNET SAUVIGNON (BARTOLUCCI) 2013

Description and Flavor Profile: Located at the base of Spring Mountain on the west side of St. Helena, this vineyard has been farmed by the Bartolucci family for three generations. With its well-drained soil and gentle slopes, this vineyard is perfect for growing Cabernet Sauvignon.

Boysenberry, black cherry, and violet notes wrapped in vanilla, caramel and toasty oak. Round, silky-rich mid-palate, cocoa powder and black tea textures on the finish.

The Process: The wine was pressed after 20-24 days on the skins and aged for 20 months in new French oak barrels. Bottled August 22, 2015. This cabernet selection ages beautifully. While enjoyable now, it will continue to develop through 2025, if not longer.

Pairing: Fantastic with grilled steak seasoned simply with salt & pepper, or a flat iron steak served with crumbled Gorgonzola. Try with barbecued baby back ribs, plank-barbecued salmon and robust, hard cheeses.

Varietal: 100% Cabernet Sauvignon from the Bartolucci Vineyard on Dean York Lane in St. Helena.
