OBSESSION SYMPHONY 2015

Description and Flavor Profile: Symphony is a cross of Muscat of Alexandria and Grenache Gris. A seductively aromatic wine with a captivating nose of gardenia, honeysuckle and star jasmine. The flavors are tropical, with peaches, pineapple and a hint of ginger, finishing off crisp and clean.

The Process: The Kautz Family has the most significant plantings of this unique grape variety, with vineyards located in both Lodi and Sierra Foothills AVAs. Symphony thrives in the mineral-rich soils of these regions. After traditional fermentation, Symphony is kept in stainless steel until bottling. We left 1.7g/l of residual sugars in the wine to nicely balance out the acidity.

Pairing: Ironstone’s Obsession Symphony is the ideal complement to many types of cuisine, especially ones on the spicy side, such as Pad Thai and other Thai dishes. The hot curry found in Indian cuisine also works well with this wine, as do grilled fruits. This wine also does great with Mexican Mole.

Obsession Red Blend 2016

OBSESSION RED BLEND 2016

Description and Flavor Profile: Aromas take fold in an instant with an incredible spiciness. Cloves and nutmeg; chocolate and vanilla beans give way to flavors of blueberries, plums, chocolate and mint that swirl in your mouth of this rich, well-balanced and full wine. The finish is bold and lengthy.

The Process: The vineyards were selected from our Lodi and Sierra Foothills vineyards combining the sandy loam soils of Lodi with the iron-rich volcanic soils of the Sierra Foothills. Each variety of this wine encompasses the unique quality that is dinstinctive to it. The Merlot and Zinfandel come from the Lodi (sub AVA Mokelumne River) which is primarily Tokay fine sandy loam soils with some clay mixed in. The Petite Sirah comes from both our vineyards in Lodi and Murphys, which are full of iron and minerals. After traditional fermentation, Obsession Red is aged three months in new French oak prior to bottling.

Pairing: Ironstone’s Obsession RED is an ideal complement to many types of cuisine, but it is especially tasty with grilled meats such as rib-eye, hamburgers, pork, and barbecue chicken, in addition to slow-roasted vegetable stew or an intensely flavored mirage of pasta with wild mushrooms.

Ironstone Chenin Blanc 2016

IRONSTONE CHENIN BLANC 2016

Description and Flavor Profile: This 2016 medium-bodied Chenin Blanc has aromas of Bosc pears, honeydew, light guava and a lovely flint-mineral character. These intense aromas are followed by flavors of pear, white peach, lemon-zest and citrus that finishes crisp, plush and mouth-filling.

The Process: In 2012, the Kautz Family planted their first Chenin Blanc in Lodi. This wine comes primarily from the Sloughouse sub appellation, but a small amount comes just west of the river in the Delta within the Clarksburg appellation. These well drained soils, each with their own unique qualities are ideal for growing world-class wine grapes.

Pairing: This Chenin Blanc is great as an aperitif or when served with goat cheese stuffed chicken, seared tuna steaks, chicken curry, grilled shrimp, soft-shelled crab or a lovely watercress salad.

Ironstone Chardonnay 2016

IRONSTONE CHARDONNAY 2016

Description and Flavor Profile: The 2016 Ironstone Chardonnay exhibits refreshing aromas of fresh green apples, citrus and tropical fruits. As it dances across the palate, light citrus layered with fresh peaches fill the mouth, as soft vanilla and oak notes linger. Good acidity gives it a crisp balance, with a creamy medium-length finish.

The Process: The Kautz Family was the first to plant Chardonnay in the Lodi region and, today, they grow Chardonnay in several of Lodi’s sub-appellations, including Mokelumne River and Sloughouse. These different vineyards provide diverse soils and that, when combined, create a more complex wine than one location alone. At Ironstone, we use crop reduction, leaf removal, organic materials, and drip irrigation to imporve the quality and intensity of flavors. Cover crops, which attract beneficial insects, are also employed. In addition, we place owl and wood duck boxes around the vineyards and ponds helping to preserve the surrounding habitats.

Pairing: This Chardonnay is world renowned for its versatility, and pairs well with many types of cuisine. For a starter, try it with French onion soup. It’s a classic with fish and shellfish. Trout almandine and grilled scallops are among our favorites.

Ironstone Pinot Noir 2015

IRONSTONE PINOT NOIR 2015

Description and Flavor Profile: Our first release of Pinot Noir gives you seductive aromas of luscious black cherries mixed with cloves, spice and a touch of vanilla. These are followed by a well-rounded and supple cherry and plum flavor with a bit of earthiness. Soft tannins and a smoky and black tea-tobacco note finishes this full flavored wine deliciously!

The Process: The Kautz Family grows these Pinot Noir grapes in their Thornton Ranch property, closest Lodi AVA to the California Delta, a vast waterway that directly connects to the Pacific Ocean. These vineyards benefit the greatest from the daily ocean breezes, making it one of the coolest areas in Lodi.

Pairing: Wild mushroom bruschetta is a great appetizer with this wine or serve with plank salmon, roasted chicken, game birds such as duck or pheasant, pork roasts or lamb chops.

Ironstone Cabernet Franc 2015

IRONSTONE CABERNET FRANC 2015

Description and Flavor Profile: Cabernet Franc is an ancient French grape varietal linked as one of Cabernet Sauvignon’s parent grape (crossed with Sauvignon Blanc). Our signature Cabernet Franc, grown in the Lodi appellation, is known for its balance and medium body. Expressive aromas of bright red berry fruits mixed with a light spice and a hint of fresh herbs leads to flavors of red cherry and raspberry with vanilla-oak undertones.

The Process: The Kautz Family grows the majority of its Cabernet Franc in two of Lodi’s sub-AVAs – Alta Mesa and Sloughhouse. Alta Mesa sits at elevations between 50 and 100 ft above sea level and is blessed with red clay loam soils. Sloughhouse reaches elevations up to 590 feet above sea level with has a more diverse topography, complete with bedrock, and slightly warmer climate. At Ironstone, we use crop reduction, leaf removal, organic amterials, and drip irrigation to improve the quality and intensity of flavors. Cover crops, which attract beneficial insencts, are also employed. In addition, we place owl and wood duck boxes around the vineyards and ponds helping to preserve the surrounding habitats.

Pairing: Cabernet Franc is a great wine to accompany any number of dishes. Grilled red meats and game are perfectly suited for this wine as well as roasted pork tenderloin. It’s also amazing with rich dark chocolate desserts.

Ironstone Merlot 2015

IRONSTONE MERLOT 2015

Description and Flavor Profile: The Ironstone 2015 Merlot is bursting with luscious fruit and soft tannins, for excellent “drinkability.” Rich, ripe black cherry and black plums leads to a hint of vanilla and toast. Flavors of currants with juicy dark fruit and spicy cedar ends with a rounded, well-balanced and complex finish.

The Process: Merlot grapes for this vintage were grown in several of Lodi’s sub-appellations. These different locations provide diverse soils and climate that, when combined, create a more complex wine than coming from one vineyard alone. At Ironstone, we use crop reduction, leaf removal, organic materials and drip irrigation to improve the quality of the grapes and intensity of flavors. Cover crops, which attract beneficial insects, are also employed, as well as the placement of owl and wood duck boxes around the vineyards and ponds to help preserve the surrounding habitats. The wine spends two months aging in new French oak.

Pairing: Our Merlot has a softer, fleshier, fruit-forward style that complements many dishes. Try it with baked pasta dishes such as lasagna, spicy rice dishes like jambalaya, hearty bean dishes with bacon or smoked ham, roast turkey and even blackened salmon or other dense fish in a tomato-based sauce.

Ironstone Old Vine Zinfandel 2015

IRONSTONE OLD VINE ZINFANDEL 2015

Description and Flavor Profile: This medium-bodied Zin has exceptional varietal characteristics, with lovely aromas of dark fruit and blackberry. Subtle pepper spice mingles with richly concentrated fruit flavors of blackberry, ripe plums and fresh red raspberries. Barrel aging created its smooth, silky finish and unprecedented depth.

The Process: The grapes for this “old vines” Zinfandel come from the Mokelumne River sub-appellation in Lodi AVA, where the vines are over 45 years old. It’s a classic Mediterranean climate with an alluvial fan of sandy loam and sandy soil– well-drained soils that are ideal for growing world-class wine grapes. It is a “prairie” environment, with a cool afternoon wind moderated by the Delta breezes. The winery practices sustainable viticultural practices such as crop reduction, leaf removal, organic materials and drip irrigation to improve the quality of the grapes and intensity of flavors. The wine is aged in French oak for three months.

Pairing: Ironstone’s ‘Old Vines’ Zinfandel works well with a variety of dishes, including most meats (pork, beef, game) and some hearty stews and seafood, like Cioppino (traditional Italian fish stew), tomato-based pastas and strong, aged cheeses.

Description and Flavor Profile: If you love a big, red wine, our 2016 Petite Sirah is a ‘must have’. Succulent and rich, its rich, deep, dark purple inky color that leads the way to bold aromas of warm berry pie and loads of blueberry, mixed with vanilla and a light pepper spice. Its full flavor of lush berries mixed with dark chocolate, warm cedar and vanilla gives way to a delightfully smooth finish, with moderate tannins.

The Process: The grapes for this Petite Sirah are grown in their Teichert Ranch vineyard in the Sloughouse sub-appellation of the Lodi AVA. These soils contain large stones throughout and are well-drained, making the soils ideal for growing world-class wine grapes. After traditional fermentation, the wine is aged 2 months in new French oak.

Pairing: Ironstone’s Petite Sirah is the perfect wine to serve with dishes like veal saltimbocca or braised beef with winter vegetables. You can also try it with other dishes that contain a variety of mushrooms.

Its dark cherry and toasted oak aromas tantalize the taste buds that will savor juicy black currant, raspberry and dark cherry flavors. This luscious, well-balanced, wine has a sweet middle palate that finishes with a lovely toasty oak component.

The Process: The Kautz Family grows Cabernet Sauvignon in several of Lodi’s sub-appellations, including Mokelumne River and Sloughhouse. These selected vineyards provide diverse soils that, when combined, create a more complex wine than one location alone. At Ironstone, we use crop reduction, leaf removal, organic materials, and drip irrigation to improve the quality and intensity of flavors. After traditional fermentation, the Cabernet Sauvignon is aged for two months in new French oak.

Pairing: Often referred to as the King of wines, Cabernet Sauvignon is a classic pairing partner for a variety of roasted, broiled or barbequed beef dishes. Its magnificent flavor and structure also works well with lamb, wild game such as venison and wild boar, hearty vegetarian dishes, as well as strong cheeses.

Ironstone Reserve Viognier 2015

IRONSTONE RESERVE VIOGNIER 2015

Description and Flavor Profile: Our classic, yet refined 2015 Reserve Viognier has a tropical bouquet of mango, pineapple and guava with hints of citrus and honey. A soft bouquet of vanilla and butter is followed by flavors of pineapple, citrus and cream, with soft oak undertones. This richly-balanced, ripe white wine lingers on the palate with its long, lingering finish.

The Process: Located at 2,400 ft. above sea level, these grapes were estate grown at Ironstone’s Hay Station Ranch vineyard in the Sierra Foothills, where warm days are cooled by the evening mountain air. Hay Station Ranch has been in the Kautz Family for four generations. What started as a cattle ranch has now become home to 100 acres of premium mountain vineyards located adjacent to the Ironstone winery. Decomposed granite mixed with sediment and red clay allow for beautiful mineral notes and richness. Ironstone’s Reserve Program focuses on three key elements: appellation, vineyards and winemaking artistry. During crush, hand-selected grapes arrive at the winery early in the morning hours, where a combination of old and new reductive winemaking techniques were used to creaste this flavorful wine. This technique preserves the naturally abundant exotic aromas that Viognier is known for. To preserve these aromas, the juice was then cold fermented and maintained in temperature-controlled stainless steel tanks. Afterwards, the 10% of the wine is aged six months in small French oak barrels.

Pairing: Viognier is a favorite with chefs because of its versatility with a wide variety of cuisine. This full-bodied white is delicate enough to pair with seafood, but can hold its own with wild game. The rich fruit and complexity of this wine make it a delightful aperitif wih an avocado and grapefruit salad, crab cakes or proscuitto-wrapped melon. In addition, Viognier has more body than most white wine and is an excellent companion to most shellfish and seafood dishes or grilled lemon rosemary chicken.

Ironstone Reserve Chardonnay 2013

IRONSTONE RESERVE CHARDONNAY 2013

Description and Flavor Profile: The 2013 Reserve Chardonnay is a classic Chardonnay full of expressive flavors and aromas. Exhibiting fine mineral qualities that are a hallmark of grapes produced in the Sierra Foothills, the Reserve Chardonnay has an extremely concentrated tropical fruit flavor with nuances of butterscotch, vanilla and ripe apple. The nose opens with savory scents of butter toffee and vanilla followed by exotic notes of spice and melon.

The Process: The grapes come from the winery’s Hay Station Ranch vineyards that have been in the Kautz Family for four generations in Calaveras County. Prime Chardonnay clusters were hand selected for their outstanding quality and then experienced a gentle, wholecluster pressing. The wine was aged ‘sur lie’ in new French oak barrels that were hand stirred weekly for the initial four months of the aging process. This process caused the wine to undergo spontaneous malolactic fermentation. The casks were stored in our underground wine caverns that remain a natural 60 degrees Fahrenheit year-round temperature. This Chardonnay received additional bottle aging prior to release.

Pairing: Go for dishes like eggs benedict or even a steak béarnaise. Fine rich fish such as turbot, grilled veal chops with mushrooms, late summer vegetables such as red peppers, corn, butternut squash and pumpkin (pumpkin ravioli goes great with this wine). Cheddar cheese. You can also try seared foie gras.

Ironstone Reserve Cabernet Franc 2014

IRONSTONE RESERVE CABERNET FRANC 2014

Description and Flavor Profile: The Reserve 2014 Cabernet Franc is an elegant, rich yet soft wine. With fleshy black cherry, blackberry and spicy oak aromas this seductive Cabernet Franc is worth drinking now or cellaring for a special occasion. Succulent, dark fruit flavors of plum, black cherry with a hint of sweet oak fills the palate and gives way to a smooth, medium finish.

The Process: Located at 2,400 ft, these grapes were estate-grown at the winery’s Hay Station Ranch vineyard, where warm days are cooled by the evening mountain air. The area’s unique soil of decomposed granite mixed with volcanic sediment and red clay produce a wonderful mineral component. Grapes have been grown in the Sierra Foothills for 150 years.These fully mature grapes were picked at their peak and delivered to the winery after being selected by our winemaker. After undergoing extended fermentation and maceration, the wine was transferred into small oak barrels (French and American) and placed into the winery’s underground caverns (at a natural temperature of 60 degrees) for 24 months.

Pairing: Cabernet Franc is a surprising wine that pairs well with both light and hearty dishes. It’s an excellent choice for chicken Marsala, roasted pork with apple stuffing and roasted or grilled red meats. It can also be a great starter with a salad of sliced Anjou pears with roasted walnuts and blue cheese crumbles.

Description and Flavor Profile: Rich and supple, this generous Zinfandel, a blend of five different old vine vineyards, offers plush aromas and flavors of ripe blackberries, pepper and chocolate, finishing with well-rounded tannins and a lingering dark, fruit finish.

The Process: Twisted, gnarly, head-trained Zinfandel vines, aged 60-80 years produced magnificent grape clusters used in this wine. Lodi, with its classic Mediterranean climate and well-drained soils has been an ideal growing region for world-class Zinfandel’s for over a century.

Pairing: The mild dark fruits and sweetness in our Reserve Zinfandel will pair perfectly with a creamy and herbaceous fettuccine pork Bolognese or a rich braised beef dish with lots of hearty vegetables.

Ironstone Reserve Rous Vineyard Old Vine Zinfandel 2015

IRONSTONE RESERVE ROUS VINEYARD OLD VINE ZINFANDEL 2015

Description and Flavor Profile: Multi-dimensional in aromas and flavors, this generously rich Zinfandel offers plush aromas and flavors of ripe blackberries, brown spices, clove, caramel and slight vanilla, finishing with well-rounded tannins and a lingering dark, fruit finish.

The Process: The grapes for this ‘Ancient Vines’ Zinfandel come from the Rous Vineyards, with vines grafted entirely from St. George rootstock, planted in 1909, making this vintage a spectacular 106 year old vines! These twisted, gnarly, head-trained vines yield grapes with an incredible concentration of flavors. 2015 was a fairly mild and normal summer in Lodi without harvest precipitation. There were no extended heat spells and the temperature remained consistent throughout. Warm days combined with the cool Pacific Ocean breezes coming through daily in Lodi’s unique microclimate created excellent growing conditions, giving the wine full flavors, intense color and balanced acidity. Fully mature grapes were harveted on September 4, 2015 at 25.5 Brix. Following hand-harvesting, these precious grape clusters were fermented in our small rotary fermenter. After undergoing extended fermentation and maceration, the newly-pressed wine was transferred into small French oak barrels and placed in the winery’s underground caverns, at a constant natural temperature of 60 degrees for ten months aging.

Pairing: Ironstone’s Reserve Rous ‘Ancient Vines’ Zinfandel is a natural for sipping on its own, or with hearty foods like roasts, game stews and big, juicy steaks. Also great with a variety of grilled meats, poultry, game birds (grilled quail), and robust cheeses.

Description and Flavor Profile: Seductive and full-bodied, our Reserve 2013 Cabernet Sauvignon exudes aromas of fresh berries, black currants and black cherries that are laced with eucalyptus, cedar and mint. Big and powerful, yet elegant, this Cabernet exhibits flavors of sweet dark blackberry and plum with soft, creamy vanilla that plays well with the unique mineral qualities found only in wines from Sierra Foothill vineyards.

The Process: These fully mature grapes were picked at their peak and delivered to the winery after being selected by our winemaker. After undergoing extended fermentation and maceration, the wine was transferred into small American and French oak barrels and placed into our underground caverns for 20 months to ensure a fuller, richer, finer wine of true varietal character. Hand blasted by local miners, many whose families came fro gold in the 1800’s, these caverns remain a natural 60 degrees Fahrenheit year-round temperature which slowly lowers the wine’s alcohol while preserving its concentration of flavor.

Pairing: Our Reserve Cabernet Sauvignon is a classic for strong flavored foods including grilled meats, lamb chops as well as strong flavored cheeses. It’s also an excellent choice for chocolate desserts such as a molten chocolate cake, bittersweet chocolate mousse or a simple plate of homemade fudge.

Description and Flavor Profile: We hand selected ultra-premium grapes from our Hay Station Ranch vineyard that is located at 2400 ft. above sea level, where warm days are cooled by the evening mountain air. While 85% of the grapes came from this vineyard, we also selected 15% from a vineyard that has unique soil of decomposed granite mixed with volcanic sediment and red clay produce a wonderful mineral component. Grapes have been grown, in the Sierra Foothills for 150 years.

Seductive and full-bodied, our Reserve 2013 Cabernet Sauvignon is an elegant, rich yet soft wine. Silky tannins and well-structured aromas of fresh berries with cassis, black currants, black cherries and toasted oak create a magical harmony of gorgeous fruit characteristics. Big and powerful, yet elegant, this Cabernet exhibits flavors of sweet dark blackberry and plum with soft, creamy vanilla that plays well with the unique mineral qualities found only in wines produced in the Sierra Foothills.

The Process: These fully mature grapes were picked at their peak and delivered to the winery after being selected by our winemaker. After undergoing extended fermentation and maceration, the wine was transferred into small oak barrels and placed into our underground caverns in small American and French oak barrels for 20 months to ensure a fuller, richer, finer wine of true varietal character. Hand blasted by local miners, many whose families came for gold in the 1800’s, these caverns remain a natural 60 degrees Fahrenheit year-round temperature, which slowly lowers the wine’s alcohol while preserving its concentration of flavor.

Pairing: Our Reserve Cabernet Sauvignon is a great wine to pair with hearty red meats. Try it with a pan-seared filet mignon with Cabernet sauce or braised lamb with horseradish and parsley. Also delicious with dark chocolate.

IRONSTONE RESERVE MERITAGE 2013

Description and Flavor Profile: Located at 2400 ft. above sea level, these grapes were estate- grown at our Hay Station Ranch vineyard where warm days are cooled by the evening mountain air. This areas unique soil of decomposed granite mixed with volcanic sediment and red clay produce a wonderful mineral component. Grapes have been grown, in the Sierra Foothills for 150 years.

For the 2013 vintage, our winemker chose three of the noble Bordeaux grape varieties to be a part of this magnificent blend which is an excpetionally elegant full-bodied wine. Aromas of blackberry jam, cassis and cola layered by mint and white pepper are displayed. Luscious cooked berry fruit fills the mouth with hints of vanilla and rich blackberry carries through to a smooth and well-rounded finish.

The Process: Our winemaker hand selected grapes throughout our vineyards only using what he deemed the best of each variety. Hand harvested at their peak, each individual lot was fermented, received extended maceration, and was independently aged for 20 months in small French and American oak barrels in our underground caverns. Hand blasted by local miners, many whose families came for gold in the 1800’s, these caverns remain a natural 60 degrees Fahrenheit year-round temperature that slowly lowers the wine’s alcohol while preserving its concentration of flavor. After barrel aging, the varietals were blended together, just prior to bottling, and received additional bottle aging prior to release.

Pairing: The French countryside, where meals are prepared with minimal fanfare, is the inspiration for pairing with Meritage. Simple foods, such as coq a vin, roasted leg of lamb and braised beef brisket are excellent choices.
